1 large yellow onion

2 cloves of garlic

1 tablespoon olive oil

2 tablespoons balsamic vinegar

2 tablespoons brown sugar

1 teaspoon fresh thyme

1 bay leaf

1/2 cup + 2 tablespoons sour cream

1/2 cup + 2 tablespoons mayonnaise

1 teaspoon chopped chives for garnish



Finely chop onion, garlic, and thyme. Place onion in a pan on medium-high heat with olive oil. Stir frequently for 10-15 minutes or until onions are browned and caramelized. Add garlic and stir until fragrant. Add in the balsamic vinegar, brown sugar, thyme, and bay leaf. Place the onion mixture in a small bowl and put in the refrigerator to cool for about 15-20 minutes. In another small bowl, mix together the sour cream, mayonnaise, salt, and pepper. Add the onion mixture to the sour cream mixture and stir until well combined.
